I had a request for something sugar-free and gluten-free today, to share with staff and visitors at the cancer unit where I work. I highly recommend the ‘Healthy Chef’, Teresa Cutter. This is based on her celebration cake.
- 6 eggs
- Vanilla paste
- Lemon Zest
- 80ml olive oil or coconut
- 75g coconut flour
- 2 tsp baking powder
- 125g berries
Whip eggs and vanilla for 8 to 10 mins. Fold in the rest and bake using an 18cm tin in a fan oven at 160C for 45mins. I’ve decorated with yogurt and more berries.
